Start with fresh ingredients and fresh-caught catfish (store-bought if necessary) and medium COOKED frozen shrimp de-veined & no tails, thawed. Get a cutting board, & set out the lemons, peppers & avocados ready to prepare.

Cut the catfish fillets length-wise and use bamboo skewers that are presoaked in water to make the sticks. Lay out in a row to get ready to add seasonings.

Now, wrap the fish sticks with bacon slices, then spray with oil (so the seasoning will stick) and add plenty of Tajinseasonings on each side. I'm using an indoor electric grill for this recipe. Place on the grill and cook until the bacon is crispy at 350 degrees.

Rotate on the grill occasionally crisping the bacon and adding the Sriracha sauce and Tajin seasonings to your desired spiciness! This step will take less time on an outdoor grill.

Add the diced Jalapenos(red & green) 2 to 3 (or use low sodium RO-TEL) Lemon (juice from 1), Sriracha Sauce, Cold Pressed Olive Oil – 2 Tbsp., Apple Cider Vinegar (ACV) – 2 Tbsp, Tajin spices, Salt & Pepper to a bowl and lightly mix with a rubber spatula keep cold.

Place the Catfish sticks on a plate next to the Avocado & Shrimp Salad & enjoy with your favorite beverage. This recipe is great for an out-door picnic or can be made in advance for your next boat or beach outing. (Also good on a back porch with friends. Make plenty!)
