Bacon Wrapped Mahi Rolls Recipe

  • Fillet each Mahi portion in half lengthwise to make 2 thin fillets.
  • Lay out two bacon strips on a cutting board side by side & place both of the Mahi fillets end-to-end to be able to roll it up with the stuffing inside.
  • Spray the fish with avocado oil & season with a bit of the seasonings to taste.
  • Cut the mini red pepper & jalapeno in half lengthwise, remove seeds and fill with cream cheese. (alternate the red and green pepper colors as pictured)
  • Roll the bacon and fish starting at on end into a roll & secure with toothpicks.
  • Roll up the remaining bacon & fish in the same way.
  • Place into an air fryer leaving space between & spray with avocado oil.
  • Add a grape tomato & oyster to the top using a toothpick.
  • Season with the remaining season to taste.
  • Cook on 350 for 20 to 30 minutes until the bacon is crispy.
  • Plate with the spinach, tomato & broccoli sprout salad with the vinegar & oil dressing.

INGREDIENTS

 

2 Mahi Fillets (4 oz. each), skinless

2 Mini red bell peppers

2 Small Jalapenos (seeds removed)

4 oz. Full fat cream cheese

8 Bacon slices (nitrate free)

8 whole grape tomatoes

4 smoked oysters (canned)

1 Tsp. Garlic Powder

1 Tsp. Onion Powder

1 Tsp. Tajin Seasoning

1/2 Tsp. Sea Salt

Avocado Oil Spray

Toothpicks


FOR THE SALAD & DRESSING

2 cups of Baby spinach

1/2 Cup of Broccoli sprouts

2 Tbsp. Apple cider vinegar (dressing)

2 Tbsp. Extra virgin olive oil (dressing)

1 Tbsp. Lemon Juice


OPTIONAL LOW-CARB EGG FRITTER

3 Pasture Raised Eggs

1 Tbsp. Grass-fed Butter

1 Tbsp. Heavy Cream

2 Tbsp. Almond Flour

2 Tsp. Tajin seasoning


EGG FRITTER COOKING & PLATING

Scramble the eggs, cream, almond flour & seasonings. Melt the butter in a medium hot skillet, pour in 1/2 the egg mixture and fry the fritter for a few minutes. Flip it over and repeat with the remaining egg mixture. (serve on the plate under the fish rolls, or as a separate side dish with grated cheddar cheese on top.)
