INGREDIENTS

4 Whole Croaker Fish Fillets

(3 oz. each), with skin-on.

4 Bacon slices (nitrate free)

2 Small Jalapenos (seeds removed)

1/4 Red Onion

1 Tsp. Garlic Powder

1 Tsp. Onion Powder

1 Tsp. Smoked Paprika

1 Tsp. Old Bay

1/2 Tsp. Cayenne Pepper

1/2 Tsp. Sea Salt

1 Tbsp. Avocado Mayo (for rub)

Avocado or Olive Oil Spray

4 Lemon wedges

1/2 Cup of grated parmesan

Toothpicks to secure the rolls


CREOLE DIPPING SAUCE

4 Tbsp. Avocado Mayonnaise

1 Tbsp. Everything Bagel Seasoning

1/2 Tsp Tony’s brand creole seasoning.

1 Tbsp. Louisiana Hot Sauce

1 Tsp. Lemon Juice

METHOD

  1. Fillet each Croaker fish is using a fillet knife.
  2. Place the fish fillets in a bowl and rub Avocado Mayo on them, then sprinkle your seasonings and lightly rub the marinade into each side. Set aside.
  3. Prepare the peppers and onion by cutting them thinly lengthwise.
  4. Lay out one bacon strip on a cutting board & place one Croaker fillet in the center (skin side down) to be able to roll it up with the stuffing inside.
  5. Place a few onion and pepper slices in the center of the fillet.
  6. Roll up the fillet and wrap the bacon around it, then secure with toothpicks so the bacon stays in place.
  7. Roll up the remaining bacon & fish in the same way.
  8. Place into an air fryer & spray with avocado oil.
  9. Season with the remaining season to taste.
  10. Cook on 350 for 20 to 30 minutes until the bacon is crispy.
  11. In a bowl, combine the Creole dipping sauce ingredients and mix well.
  12. After cooking let the fish rolls cool to touch, and plate them along-side of the Creole dipping sauce. Enjoy!
